Using the finest cacao, and a modern take on traditional European technique, we are able to fully realize the potential of the beans we source. All of our chocolate is carefully crafted from the bean in our small factory in Northern California.
"Last year we had the privilege to spend a week in the very remote Western Provinces (Solomon Islands) working with local cacao farmers to improve all aspects of their production. We covered topics ranging from proper harvest techniques, to fermentation and drying. They were eager to learn and put into practice the things we talked about. We were hosted by a young farmer named Kenny Patovaki on his small island of Paspaskato. Six months later, we received a sample of cacao that Kenny had grown, fermented, and dried using the techniques he learned during the seminar. The sample was fantastic, and we could clearly see he had been working on all aspects of his production to improve quality. This year, we were invited back to judge the cacao contest in the Solomon Islands for the second year in a row. Kenny entered his cacao in the contest this year and went on to win top prize! We were so proud of him and his ability to consistently produce to a very high standard. Yet again, we brought a small amount home with us for a second exclusive release of the winning cacao from the Solomon Island Chocolate Week."
