Ingredients
2 cups (240g) all-purpose flour
1-1/2 cups packed (320g) brown sugar
1 teaspoon (6g) baking soda
1/2 teaspoon salt
1-1/2 cups (3 sticks, 339g) cold butter, cubed
2 cups (198g) rolled oats
12 ounces (340g) dark chocolate, chopped
12 ounces (340g) caramel sauce (see below to make from scratch), warmed until pourable
2 cups (394g) granulated sugar
10 tablespoons (141g) salted butter, at room temperature and cut into pieces
3/4 cup (170g) heavy cream, at room temperature
1 teaspoon fleur de sel (or another sea salt)

Directions
In a large bowl, combine flour, brown sugar, baking soda and salt. Cut in butter until crumbly. Stir in oats. Set half aside for topping.
Press the remaining crumb mixture into a greased 13x9-in. baking pan. Bake at 350° for 15 minutes.
Sprinkle with the chocolate. Drizzle caramel over top. Sprinkle with the reserved crumb mixture. Bake for 18-20 minutes or until golden brown. Cool on a wire rack for 2 hours before cutting. Drizzle squares with melted chocolate if desired.
Caramel Sauce
In a 2 to 3 quart saucepan, melt the sugar over medium-high heat, stirring only until the sugar has melted. Once all the sugar has melted, swirl the pan occasionally until the sugar turns dark amber in color, then add your butter and salt and whisk vigorously until all the butter has melted.
Remove pan from the heat, wait 30 seconds then slowly pour in the cream while whisking, until all the cream is incorporated. Let the sauce cool before using. Store unused sauce in refrigerator for up to 2 weeks.
