Ingredients
445g peeled, very-ripe bananas by weight (about 5 small or 4 medium)
¼ cup (55g) unsalted butter, melted
¼ cup (50g) baking oil
1/4 cup (65g) sour cream
2 large eggs
1 tsp vanilla extract
1 ¾ cups (228g) all-purpose flour
1 cup (200g) packed light brown sugar
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
3/4 tsp salt
1 cup (140g) Dick Taylor Baking Chocolate Chips, roughly chopped
1-½ tablespoons coarse sugar for sprinkling
Directions
Preheat oven to 325F. Line a 9x5 loaf pan with parchment paper with a 1” overhang for easy removal. Using a whisk, stir together dry ingredients into a medium bowl. Set aside.
Using a hand whisk, or an electric mixer on low, whisk bananas until smooth in a large bowl. Add in butter, oil, sour cream, eggs and vanilla and mix on low just until fully incorporated.
Add dry ingredients and incorporate just until almost no flour streaks remain. Fold in chocolate pieces.
Pour batter into prepared pan. Sprinkle with sugar and bake for about 90 minutes until internal temp reaches 200F or toothpick inserted near the middle comes out clean.
