Savor this luxurious Chocolate Peanut Butter Pie, boasting three layers of creamy peanut butter, decadent chocolate ganache, and a chocolate graham cracker crust. This pie uses a total of 8oz of chocolate. The crust can be made a day or two ahead if desired. Allow for 5 hours of cooling.
Ingredients
2-½ oz (71g) Dick Taylor Couverture or Baking Chocolate Chips, finely chopped
1/4 cup (76g) butter, melted
1-1/4 cups (145g) graham crackers (9 full-sheets), finely crushed
2 tablespoons (25g) brown sugar
1 cup (227g) heavy cream
5 ½ oz (156g) Dick Taylor Couverture or Baking Chocolate Chips, chopped
1/4 teaspoon salt
8 oz cream cheese, room temperature
1 cup (256g) peanut butter, room temperature
1 cup (114g) confectioner's sugar
¼ teaspoon salt
1 tsp vanilla extract
1-1/4 cups heavy cream, separated

Directions
For the Crust
In a small heat-proof bowl, melt together butter and chocolate, stirring every 30 seconds, until smooth.
Stir together graham cracker crumbs and sugar in a medium-sized bowl. Add melted chocolate mixture and stir until crumbs are all moistened.
Pour mixture into an ungreased pie pan. Use the bottom of a measuring cup to firmly pack crumbs into the bottom of the pan and up the sides.
Bake in preheated oven at 350F for 8 minutes. Set aside to cool.
For the Ganache
Heat cream, chocolate, and salt in a heat-proof bowl, stirring every 30 seconds until chocolate is melted.
Pour most of the ganache into the cooled crust, reserving 3-4 tablespoons for later. Refrigerate until set, 45 minutes to 1 hour.
For the Peanut Butter Layer
Whisk confectioners’ sugar, peanut butter, cream cheese, and 1/4 cup cream on low speed for 1 minute. Increase speed and whip for an additional 2 minutes until fluffy.
In a separate bowl, whip the remaining 1 cup of cream into stiff peaks. Gently fold whipped cream into peanut butter mixture in 2 additions until no white streaks remain. Spoon filling onto ganache and spread evenly.
Reheat reserved ganache until pourable and drizzle over pie. Chill for 3-4 hours until set.
