1 cup packed brown sugar (200g)
¾ cup cornstarch (96g)
1 tsp (7g) salt
96oz milk (2 bottles Alexander Family Farms 6% cream)
32 oz 70% belize couverture, roughly chopped
2 tsp vanilla extract
Combine sugar, cornstarch and salt in large saucepan.
Whisk milk into sugar mixture until smooth. Heat until steaming and bubbles form on top and barely thickened (150D).
Add chocolate and bring to a simmer over medium heat, whisking constantly. Reduce heat to low and cook, whisking constantly, until thickened and large bubbles appear at surface, 2-3 minutes (175D). Remove saucepan from heat and stir in vanilla.
Pour pudding through sieve into container and place parchment paper directly on surface of pudding (prevents the pudding from developing a “skin”).
Cover and refrigerate for at least 4 hours until cool.
Remove parchment paper and scoop out any darker/lumpy pudding around edges. Stir slightly. Fill cups with 5oz pudding each and cover with lids.
