Ingredients
10oz 70-72% dark chocolate, chopped into small chunks and divided
⅓ cup (79ml) neutral baking oil
2 cups (280g) all-purpose flour
1/4 cup (50g) packed brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon sea salt
3 large eggs, room temp
2 cups (473ml) buttermilk or sour milk, room temp
1 teaspoon vanilla extract
Directions
In a heat proof bowl, melt together the oil and 4oz of the chopped chocolate over low heat or in the microwave, stirring often.
Whisk flour, brown sugar, baking powder, baking soda, and salt in a large bowl. Stir in remaining 6oz of chocolate chunks.
In another bowl, mix together the remaining wet ingredients.
Pour the wet ingredients and the chocolate mixture into the bowl with the dry ingredients and whisk just until combined and no flour streaks remain.
Heat a waffle iron until very hot and lightly coat with nonstick spray. Working in batches, cook waffles until cooked through.
Serve with whipped cream, fruit, or syrup if desired.
