By melding the deep flavors of dark chocolate with the light, crisp texture of a well-made waffle, these Chocolate Waffles are a fantastic alternative to traditional breakfast waffles, offering a delicious start to your day or a novel brunch option. The waffle batter incorporates both melted and chunked dark chocolate for a double hit of chocolatey goodness. Additional sweetness is contributed by brown sugar and vanilla extract, while buttermilk keeps the waffles moist and fluffy. The use of sea salt subtly counters the sweet components, creating a balanced flavor profile. These waffles are versatile in their serving options; top them with whipped cream, fresh fruits, or your syrup of choice. Despite its gourmet taste, this recipe is quite approachable, making it perfect for anyone looking to try an easy and distinctively delicious breakfast treat.
10oz 70-72% dark chocolate, chopped into small chunks and divided
⅓ cup (79ml) neutral baking oil
2 cups (280g) all-purpose flour
1/4 cup (50g) packed brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon sea salt
3 large eggs, room temp
2 cups (473ml) buttermilk or sour milk, room temp
1 teaspoon vanilla extract
In a heat proof bowl, melt together the oil and 4oz of the chopped chocolate over low heat or in the microwave, stirring often.
Whisk flour, brown sugar, baking powder, baking soda, and salt in a large bowl. Stir in remaining 6oz of chocolate chunks.
In another bowl, mix together the remaining wet ingredients.
Pour the wet ingredients and the chocolate mixture into the bowl with the dry ingredients and whisk just until combined and no flour streaks remain.
Heat a waffle iron until very hot and lightly coat with nonstick spray. Working in batches, cook waffles until cooked through.
Serve with whipped cream, fruit, or syrup if desired.
