Ingredients
1 ⅔ cups (213g) all-purpose flour
¾ teaspoon baking soda
½ teaspoon table salt
3oz (85g) 70% dark chocolate, chopped
3 tablespoons (44ml) vegetable oil
⅔ cup (133g) granulated sugar
¾ cup brewed coffee
Directions
Preheat the oven to 350°F. Line the bottom of a 9" springform pan with parchment paper.
Sift together the flour, soda and salt into a medium bowl and set aside.
In a heat safe bowl, melt together the oil and chocolate and whisk together until no chocolate lumps remain.
Whisk in the sugar, then the coffee. Add the flour mixture and whisk until no lumps remain.
Working quickly, add the water and vinegar and whisk briskly until combined, then immediately pour into prepared pan. Place plums cut side up on top of batter.
Bake for 40 minutes or until a toothpick inserted near the middle (avoiding the plums) comes out clean. Serve plain, or with ice cream or whipped cream as desired.
