For our 87th Microbatch Bar, we’ve paired our 73% Brown Butter Dark Chocolate with roasted almonds and fresh rosemary for an unexpected and beautifully balanced combination. The nutty richness of the browned butter melds seamlessly with the soft, toasty almonds, while the rosemary adds a subtle savory lift that keeps the bar sweet yet intriguing. We roast sliced almonds in olive oil and rosemary before finishing the bar with a generous layer on the back of the chocolate. The result is a gently savory, nut-forward bar with a warm, aromatic finish.
