Microbatch: barrel aged apple brandy

This month's microbatch is a delicious Barrel Aged Apple Brandy 70% dark Chocolate bar! We partnered with Sonoma Brothers Distillery in Sonoma, California to age our cacao nibs from Belize in their award-winning Apple Brandy barrels for 18 months! This longer aging period allows the nibs to deeply absorb the flavor notes of apple and white wine from the aromatic barrels, resulting in even more pronounced fruity and earthy tones. The final result is a surprisingly complex bar with rich undertones of vanilla and cinnamon.

USING THE FINEST CACAO AND TRADITIONAL EUROPEAN TECHNIQUES, ALL OF OUR CHOCOLATE IS CAREFULLY CRAFTED FROM THE BEAN IN OUR SMALL FACTORY IN NORTHERN CALIFORNIA.

Processed on shared equipment with milk, wheat, peanuts and tree nuts.
